Chargrilled watermelon, prawn and feta salad

To make this dish at home by prescription from the author Gomer would need: 1/4 seedless watermelon, rind removed, cut into 1cm-thick wedges, 1.2kg large cooked king prawns, peeled leaving tails intact, 200g feta, crumbled, 1/2 red onion, cut into thin wedges, 1/2 cup fresh mint leaves , 2 tbsp red wine vinegar, 2 tbsp olive oil, 1 tbsp ouzo .
Ingredients:
- 1/4 seedless watermelon, rind removed, cut into 1cm-thick wedges
- 1.2kg large cooked king prawns, peeled leaving tails intact
- 200g feta, crumbled
- 1/2 red onion, cut into thin wedges
- 1/2 cup fresh mint leaves
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tbsp ouzo
Instructions
- To make the ouzo dressing, whisk together the vinegar, oil and ouzo in a jug. Season with salt and pepper.
- Preheat a chargrill or barbecue grill on high. Add the watermelon and cook for 1 minute each side or until charred.
- Arrange the watermelon on serving plates. Top with prawns, feta, onion and mint. Drizzle over the ouzo dressing. Serve immediately.
