To make this dish at home by prescription from the author Gomer would need: 1/4 seedless watermelon, rind removed, cut into 1cm-thick wedges, 1.2kg large cooked king prawns, peeled leaving tails intact, 200g feta, crumbled, 1/2 red onion, cut into thin wedges, 1/2 cup fresh mint leaves , 2 tbsp red wine vinegar, 2 tbsp olive oil, 1 tbsp ouzo .

Ingredients:

  • 1/4 seedless watermelon, rind removed, cut into 1cm-thick wedges 
  • 1.2kg large cooked king prawns, peeled leaving tails intact 
  • 200g feta, crumbled 
  • 1/2 red onion, cut into thin wedges 
  • 1/2 cup fresh mint leaves 
  • 2 tbsp red wine vinegar 
  • 2 tbsp olive oil 
  • 1 tbsp ouzo 

Instructions

  1. To make the ouzo dressing, whisk together the vinegar, oil and ouzo in a jug. Season with salt and pepper.
  2. Preheat a chargrill or barbecue grill on high. Add the watermelon and cook for 1 minute each side or until charred.
  3. Arrange the watermelon on serving plates. Top with prawns, feta, onion and mint. Drizzle over the ouzo dressing. Serve immediately.
