This smokey, spicy and citrussy salad makes the perfect lunch or light dinner.

To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups jasmine and wild rice blend, 1/3 cup mirin, 2 tbsp rice vinegar, 1 tbsp tamari or soy sauce, 1/4 tsp sesame oil , 1 tbsp lime juice, 1 small red chilli, seeded, fi nely chopped, 1 telegraph cucumber, halved, sliced on the diagonal , 2 smoked chicken breast fillets, finely shredded, 1/4 cup chopped mint, plus extra leaves to garnish, 1/4 cup chopped coriander, plus extra leaves to garnish, 1 small red onion, very thinly sliced, 1/2 cup chopped roasted peanuts, Sweet chilli sauce and lettuce leaves , to serve.

Ingredients:

  • 1 1/2 cups jasmine and wild rice blend 
  • 1/3 cup mirin 
  • 2 tbsp rice vinegar 
  • 1 tbsp tamari or soy sauce 
  • 1/4 tsp sesame oil 
  • 1 tbsp lime juice 
  • 1 small red chilli, seeded, fi nely chopped 
  • 1 telegraph cucumber, halved, sliced on the diagonal 
  • 2 smoked chicken breast fillets, finely shredded 
  • 1/4 cup chopped mint, plus extra leaves to garnish 
  • 1/4 cup chopped coriander, plus extra leaves to garnish 
  • 1 small red onion, very thinly sliced 
  • 1/2 cup chopped roasted peanuts 
  • Sweet chilli sauce and lettuce leaves , to serve 

Instructions

  1. Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.
  2. Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
