Smoked chicken & wild rice salad

This smokey, spicy and citrussy salad makes the perfect lunch or light dinner.

To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups jasmine and wild rice blend, 1/3 cup mirin, 2 tbsp rice vinegar, 1 tbsp tamari or soy sauce, 1/4 tsp sesame oil , 1 tbsp lime juice, 1 small red chilli, seeded, fi nely chopped, 1 telegraph cucumber, halved, sliced on the diagonal , 2 smoked chicken breast fillets, finely shredded, 1/4 cup chopped mint, plus extra leaves to garnish, 1/4 cup chopped coriander, plus extra leaves to garnish, 1 small red onion, very thinly sliced, 1/2 cup chopped roasted peanuts, Sweet chilli sauce and lettuce leaves , to serve.
Ingredients:
- 1 1/2 cups jasmine and wild rice blend
- 1/3 cup mirin
- 2 tbsp rice vinegar
- 1 tbsp tamari or soy sauce
- 1/4 tsp sesame oil
- 1 tbsp lime juice
- 1 small red chilli, seeded, fi nely chopped
- 1 telegraph cucumber, halved, sliced on the diagonal
- 2 smoked chicken breast fillets, finely shredded
- 1/4 cup chopped mint, plus extra leaves to garnish
- 1/4 cup chopped coriander, plus extra leaves to garnish
- 1 small red onion, very thinly sliced
- 1/2 cup chopped roasted peanuts
- Sweet chilli sauce and lettuce leaves , to serve
Instructions
- Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.
- Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
