To make this dish at home by prescription from the author Gomer would need: 1/4 cup walnuts, 8 slices Primo Gourmet Selection Pancetta, 2 golden delicious or Granny Smith apples, cored, peeled and sliced, 200g packet gourmet salad, 1/4 cup extra virgin olive oil , 1/4 cup apple cider vinegar, 1 tsp sugar, 2 tbsp shaved parmesan cheese .

Ingredients:

  • 1/4 cup walnuts 
  • 8 slices Primo Gourmet Selection Pancetta 
  • 2 golden delicious or Granny Smith apples, cored, peeled and sliced 
  • 200g packet gourmet salad 
  • 1/4 cup extra virgin olive oil 
  • 1/4 cup apple cider vinegar 
  • 1 tsp sugar 
  • 2 tbsp shaved parmesan cheese 

Instructions

  1. Toast the walnuts in a frying pan over a medium heat, tossing until fragrant. Remove and set aside.
  2. Add the pancetta and cook until crisp. Remove and set aside. Tear into rough pieces. Add the apples. Cook on both sides until golden.
  3. Combine the walnuts, torn pancetta, apples and salad leaves in a large bowl. Whisk the extra virgin olive oil, apple cider vinegar and sugar in a small bowl. Pour the dressing over the salad. To serve, scatter with the parmesan.
