Curried turkey rissoles with spinach salad

To make this dish at home by prescription from the author Gomer would need: 600g turkey mince, 1/2 cup chopped fresh coriander, 2 tbsp mild curry paste, 1 garlic clove, crushed, Olive oil spray , 6 pita breads, 80g baby spinach leaves, 1 small red onion, halved, thinly sliced , 200g Tamar Valley Greek Style Yoghurt.

Ingredients:

  • 600g turkey mince 
  • 1/2 cup chopped fresh coriander 
  • 2 tbsp mild curry paste 
  • 1 garlic clove, crushed 
  • Olive oil spray 
  • 6 pita breads 
  • 80g baby spinach leaves 
  • 1 small red onion, halved, thinly sliced 
  • 200g Tamar Valley Greek Style Yoghurt 

Instructions

  1. Combine the mince, coriander, curry paste and garlic in a large bowl. Season with salt and pepper. Divide the mince mixture into 8 equal portions and shape into rissoles.
  2. Preheat a large barbecue grill or chargrill on medium-high. Lightly spray with oil. Add the rissoles and cook for 4 minutes each side or until golden and cooked through. Transfer to a plate and cover with foil to keep warm. Add the bread to the grill and cook for 1-2 minutes each side or until lightly charred. Cut into wedges.
  3. Combine the spinach and onion in a bowl.
  4. Divide the rissoles, bread and spinach mixture among serving dishes and top with the yoghurt.
