Smoked salmon & crisp wonton salad

This light Asian-style starter is a new way to serve a dinner-party staple, smoked salmon.

To make this dish at home by prescription from the author Gomer would need: 8 flour wonton wrappers, Olive oil spray, 125ml fresh lime juice, 2 tbsp fish sauce, 1 1/2 tbsp brown sugar , 1 fresh red birdseye chilli, deseeded, finely chopped, 2 tbsp chopped fresh mint, 2 carrots, peeled, cut into matchsticks , 1 Lebanese cucumber, deseeded, cut into matchsticks, 100g snow peas, trimmed, thinly sliced lengthways, 300g smoked salmon slices.

Ingredients:

  • 8 flour wonton wrappers 
  • Olive oil spray 
  • 125ml fresh lime juice 
  • 2 tbsp fish sauce 
  • 1 1/2 tbsp brown sugar 
  • 1 fresh red birdseye chilli, deseeded, finely chopped 
  • 2 tbsp chopped fresh mint 
  • 2 carrots, peeled, cut into matchsticks 
  • 1 Lebanese cucumber, deseeded, cut into matchsticks 
  • 100g snow peas, trimmed, thinly sliced lengthways 
  • 300g smoked salmon slices 

Instructions

  1. Spray both sides of 1 wonton wrapper with olive oil spray. Place on a microwave-safe plate. Cook on High/800 watts/100% for 30-40 seconds or until crisp. Cut into strips. Repeat with remaining wontons.
  2. Whisk together the lime juice, fish sauce, sugar, chilli and mint in a jug.
  3. Combine carrot, cucumber and snow peas in a bowl. Divide salmon among serving plates. Top with carrot salad and wontons and drizzle over dressing. Serve.
