Cos salad with creamy tarragon dressing

To make this dish at home by prescription from the author Gomer would need: 60ml extra virgin olive oil, 2 tbsp sour cream, 3 tsp white wine vinegar, 1/2 tsp caster sugar, 2 green shallots, ends trimmed, finely chopped , 1 tbsp finely chopped fresh tarragon, Salt & freshly ground black pepper, 3 cos lettuce, leaves separated, washed, dried .

Ingredients:

  • 60ml extra virgin olive oil 
  • 2 tbsp sour cream 
  • 3 tsp white wine vinegar 
  • 1/2 tsp caster sugar 
  • 2 green shallots, ends trimmed, finely chopped 
  • 1 tbsp finely chopped fresh tarragon 
  • Salt & freshly ground black pepper 
  • 3 cos lettuce, leaves separated, washed, dried 

Instructions

  1. Combine oil, sour cream, vinegar, sugar, green shallot and tarragon in a bowl. Taste and season with salt and pepper.
  2. Place the lettuce in a large bowl. Cover with cold water and place in the fridge for 20 minutes to chill. Drain well.
  3. Arrange the lettuce on a large serving platter. Drizzle with the dressing and serve immediately.
