Thai beef and rice salad with mint

To make this dish at home by prescription from the author Gomer would need: 2 cups SunRice Thai Jasmine Rice, 480g beef rump steak, 1 tbsp vegetable oil, 1 medium size cucumber, cut in half and sliced, 1 red onion, sliced , 1 punnet cherry tomatoes, 1/4 bunch fresh mint, roughly chopped, 4 tbsp fish sauce , 2 tbsp soy sauce, Juice of 1 lime, 2 tbsp sesame oil, 1/2 red chilli, deseeded, sliced.
Ingredients:
- 2 cups SunRice Thai Jasmine Rice
- 480g beef rump steak
- 1 tbsp vegetable oil
- 1 medium size cucumber, cut in half and sliced
- 1 red onion, sliced
- 1 punnet cherry tomatoes
- 1/4 bunch fresh mint, roughly chopped
- 4 tbsp fish sauce
- 2 tbsp soy sauce
- Juice of 1 lime
- 2 tbsp sesame oil
- 1/2 red chilli, deseeded, sliced
Instructions
- Heat oil in a fry pan and fry beef until cooked to your liking, take out of the pan and leave aside to cool and slice thinly.
- Mix together all dressing ingredients in a bowl combine all other ingredients and add cooled beef.
- Pour the dressing over and toss together.
