To make this dish at home by prescription from the author Gomer would need: 100g mixed salad leaves, 1/2 cup fresh flat-leaf parsley leaves, 1 continental cucumber, halved lengthways, thickly sliced, 340g jar mixed marinated olives, 2 x 125g portions hot-smoked salmon , 2 tbsp hot tomato chutney .

Ingredients:

  • 100g mixed salad leaves 
  • 1/2 cup fresh flat-leaf parsley leaves 
  • 1 continental cucumber, halved lengthways, thickly sliced 
  • 340g jar mixed marinated olives 
  • 2 x 125g portions hot-smoked salmon 
  • 2 tbsp hot tomato chutney 

Instructions

  1. Arrange salad leaves, parsley and cucumber on a platter. Drain olives, reserving 1 tablespoon marinating oil. Top salad with olives.
  2. Remove and discard skin from salmon portions. Flake salmon and place on salad.
  3. Combine tomato chutney, reserved marinating mixture and 2 tablespoons cold water in a small bowl. Season with salt and pepper. Drizzle over salad. Serve.
