Peach and ham salad with blue cheese croutons

Chill out with this no-cook peach and ham salad which takes the heat out of the summertime kitchen.

To make this dish at home by prescription from the author Gomer would need: 30cm baguette bread, ends trimmed, 2 tbsp white balsamic vinegar, 2 tbsp extra virgin olive oil, 100g mixed salad leaves, 3 radishes, trimmed, thinly sliced , 200g sliced leg ham, 8 canned peach halves, cut into wedges, 75g blue castello cheese .

Ingredients:

  • 30cm baguette bread, ends trimmed 
  • 2 tbsp white balsamic vinegar 
  • 2 tbsp extra virgin olive oil 
  • 100g mixed salad leaves 
  • 3 radishes, trimmed, thinly sliced 
  • 200g sliced leg ham 
  • 8 canned peach halves, cut into wedges 
  • 75g blue castello cheese 

Instructions

  1. Preheat grill on high. Cut baguette into 2cm-thick slices. Place in a single layer on a baking tray. Grill for 1 minute each side or until golden.
  2. Combine vinegar and oil in small bowl. Place salad leaves, radish, ham and peach in a large bowl. Drizzle with dressing. Season with salt and pepper. Toss gently until well combined. Divide between plates.
  3. Spread toasted baguette with blue cheese. Serve with salad.
