Ingredients:

  • 150g snow peas, trimmed 
  • 4 green onions 
  • 50g snow pea sprouts, trimmed 
  • 2 Lebanese cucumbers, halved lengthways, sliced 
  • 3 cups chopped cooked chicken 
  • 2/3 cup hoisin sauce 
  • 400g packet frozen French-style crepes 
  • 8 garlic chives 

Instructions

  1. Finely shred snow peas and thinly slice onions. Place in a bowl. Add sprouts and cucumber. Toss to combine. Place chicken and hoisin sauce in separate bowls.
  2. Heat crepes following packet directions. Place 1 crepe on a plate. Top with one-eighth of the snow pea mixture, chicken and hoisin sauce. Roll up. Secure with a chive. Repeat with remaining crepes, snow pea mixture and hoisin sauce. Serve.
