This pretty summer salad is a healthier option for the Christmas table.

To make this dish at home by prescription from the author Gomer would need: 1 bunch red radish, trimmed, 1 large carrot, peeled, 1/3 cup fresh orange juice, 2 tbsp extra virgin olive oil, Salt & freshly ground pepper , 2 tsp poppy seeds, 1/4 cup fresh continental parsley leaves, 1/4 cup fresh mint leaves , 1/3 cup raisins, 100g goat's cheese, crumbled.
Ingredients:
- 1 bunch red radish, trimmed
- 1 large carrot, peeled
- 1/3 cup fresh orange juice
- 2 tbsp extra virgin olive oil
- Salt & freshly ground pepper
- 2 tsp poppy seeds
- 1/4 cup fresh continental parsley leaves
- 1/4 cup fresh mint leaves
- 1/3 cup raisins
- 100g goat's cheese, crumbled
Instructions
- Thinly slice the radish. Cut the carrot in half crossways then cut each half into thin matchsticks.
- Combine the orange juice and extra virgin olive oil. Season with salt and pepper.
- Place the radish, carrot, poppy seeds and dressing in a bowl and mix until well combined. Add the parsley and mint leaves. Toss gently to combine.
- Transfer to a large salad bowl. Scatter the raisins and goat's cheese over the salad. Drizzle over any dressing remaining in the bowl. Season with freshly ground pepper. Serve this salad as a light meal or as an accompaniment to prawns, lamb or beef.
