To make this dish at home by prescription from the author Gomer would need: 1 bunch red radish, trimmed, 1 large carrot, peeled, 1/3 cup fresh orange juice, 2 tbsp extra virgin olive oil, Salt & freshly ground pepper , 2 tsp poppy seeds, 1/4 cup fresh continental parsley leaves, 1/4 cup fresh mint leaves , 1/3 cup raisins, 100g goat's cheese, crumbled.

Ingredients:

  • 1 bunch red radish, trimmed 
  • 1 large carrot, peeled 
  • 1/3 cup fresh orange juice 
  • 2 tbsp extra virgin olive oil 
  • Salt & freshly ground pepper 
  • 2 tsp poppy seeds 
  • 1/4 cup fresh continental parsley leaves 
  • 1/4 cup fresh mint leaves 
  • 1/3 cup raisins 
  • 100g goat's cheese, crumbled 

Instructions

  1. Thinly slice the radish. Cut the carrot in half crossways then cut each half into thin matchsticks.
  2. Combine the orange juice and extra virgin olive oil. Season with salt and pepper.
  3. Place the radish, carrot, poppy seeds and dressing in a bowl and mix until well combined. Add the parsley and mint leaves. Toss gently to combine.
  4. Transfer to a large salad bowl. Scatter the raisins and goat's cheese over the salad. Drizzle over any dressing remaining in the bowl. Season with freshly ground pepper. Serve this salad as a light meal or as an accompaniment to prawns, lamb or beef.
