To make this dish at home by prescription from the author Gomer would need: 1 ripe avocado, chopped, 1/2 lime, juiced, 200g packet baby Asian salad greens, 3 Lebanese cucumbers, thinly sliced, 400g sliced smoked salmon, cut into 1cm-thick strips , 3 green onions, thinly sliced, 1 tbsp sesame seeds, toasted, to serve, 1/4 cup salt-reduced soy sauce , 1/4 cup mirin, 1 1/2 tbsp brown sugar, 1 tsp sesame oil.

Ingredients:

  • 1 ripe avocado, chopped 
  • 1/2 lime, juiced 
  • 200g packet baby Asian salad greens 
  • 3 Lebanese cucumbers, thinly sliced 
  • 400g sliced smoked salmon, cut into 1cm-thick strips 
  • 3 green onions, thinly sliced 
  • 1 tbsp sesame seeds, toasted, to serve 
  • 1/4 cup salt-reduced soy sauce 
  • 1/4 cup mirin 
  • 1 1/2 tbsp brown sugar 
  • 1 tsp sesame oil 

Instructions

  1. Make sweet soy dressing: Combine soy sauce, mirin, sugar and oil in a small saucepan. Bring to the boil over medium heat. Simmer for 1 minute. Transfer to a heatproof jug. Set aside to cool.
  2. Place avocado in a small bowl. Drizzle with lime juice and season with pepper. Arrange salad greens on a large plate. Top with cucumber, smoked salmon, green onion and avocado mixture. Drizzle with dressing. Toss gently. Sprinkle with sesame seeds and serve.
