To make this dish at home by prescription from the author Gomer would need: 300g Brussels sprouts, very thinly sliced, 400g can chickpeas, rinsed, drained, 2 cups wild rocket leaves, 1/2 cup dried cranberries, 1 cup roasted hazelnuts, skins removed , 1 cup shaved pecorino, 1/3 cup extra virgin olive oil, 1/4 cup lemon juice , 1 tsp thyme leaves, 1/4 cup chopped chives.

Ingredients:

  • 300g Brussels sprouts, very thinly sliced 
  • 400g can chickpeas, rinsed, drained 
  • 2 cups wild rocket leaves 
  • 1/2 cup dried cranberries 
  • 1 cup roasted hazelnuts, skins removed 
  • 1 cup shaved pecorino 
  • 1/3 cup extra virgin olive oil 
  • 1/4 cup lemon juice 
  • 1 tsp thyme leaves 
  • 1/4 cup chopped chives 

Instructions

  1. Combine sprouts, chickpeas, rocket, berries, nuts and half the cheese in a bowl. Whisk oil, juice and herbs in a separate bowl and season. Toss with the salad and scatter with remaining 1/2 cup (40g) cheese.
