To make this dish at home by prescription from the author Gomer would need: 1/2 cup brown rice, 1 baby cos lettuce, 125g can corn kernels, drained, 1 medium red capsicum, chopped, 100g snow peas, thinly sliced , 2 tbsp chopped fresh chives, 2 tbsp extra-virgin olive oil, 1 tbsp lemon juice .

Ingredients:

  • 1/2 cup brown rice 
  • 1 baby cos lettuce 
  • 125g can corn kernels, drained 
  • 1 medium red capsicum, chopped 
  • 100g snow peas, thinly sliced 
  • 2 tbsp chopped fresh chives 
  • 2 tbsp extra-virgin olive oil 
  • 1 tbsp lemon juice 

Instructions

  1. Cook rice in a saucepan of boiling water following packet directions until tender. Drain. Place on a tray. Cool.
  2. Make Basic lemon dressing: Place oil and lemon juice in a screwtop jar. Season with salt and pepper. Secure lid. Shake to combine.
  3. Remove outer leaves and core from lettuce. Separate leaves. Wash and pat dry with a tea towel. Roughly chop. Place lettuce, corn, capsicum, snow peas, rice and chives in a bowl. Add dressing. Toss to combine. Serve.
