Green bean and snow pea pasta salad

Pasta gets a new twist with beans and snow peas in this stunning summer side salad.

To make this dish at home by prescription from the author Gomer would need: 200g thin spaghetti, broken into 5cm lengths, 250g green beans, trimmed, 250g snow peas, trimmed, 1 medium zucchini, grated, 2 tbsp drained baby capers , 1/2 small red onion, finely chopped, 2 tbsp chopped fresh dill, 1/2 cup French dressing , 1 medium avocado, finely chopped.

Ingredients:

  • 200g thin spaghetti, broken into 5cm lengths 
  • 250g green beans, trimmed 
  • 250g snow peas, trimmed 
  • 1 medium zucchini, grated 
  • 2 tbsp drained baby capers 
  • 1/2 small red onion, finely chopped 
  • 2 tbsp chopped fresh dill 
  • 1/2 cup French dressing 
  • 1 medium avocado, finely chopped 

Instructions

  1. Cook pasta in a large saucepan of boiling, salted water, following packet directions until tender. Drain. Rinse under cold water. Drain well.
  2. Meanwhile, cook beans and snow peas in a small saucepan of boiling water for 2 minutes or until just tender. Rinse under cold water. Drain. Cut into 3cm lengths.
  3. Place bean mixture, zucchini, capers, onion, dill and cooled pasta in a large bowl. Season with salt and pepper. Add dressing. Toss to combine. Add avocado. Toss gently. Serve.
