Ingredients:

  • Leaves from 2-3 heads baby cos lettuce 
  • 2 pears , cut into thin wedges 
  • 2/3 cup pecans, toasted and roughly chopped 
  • 325g thinly sliced rare roast beef* 
  • 2/3 cup thin cream 
  • 2 tbsp lemon juice 
  • 1 tbsp olive oil 
  • 2/3 cup crumbled hard blue cheese 

Instructions

  1. For the dressing, whisk together cream, lemon juice and oil. Stir in cheese, being careful not to break up too much.
  2. Divide lettuce among 4 large shallow bowls. Top with pear, pecans and roast beef, then drizzle over the dressing.
