Green bean and radish salad with basil dressing

To make this dish at home by prescription from the author Gomer would need: 500g green beans, trimmed, halved, 1/2 red oak lettuce, leaves separated, 1 bunch radishes, trimmed, thinly sliced, 1 avocado, chopped, 2 tbsp olive oil , 2 tbsp white wine vinegar, 1 tsp caster sugar, 2 tsp finely chopped fresh basil .

Ingredients:

  • 500g green beans, trimmed, halved 
  • 1/2 red oak lettuce, leaves separated 
  • 1 bunch radishes, trimmed, thinly sliced 
  • 1 avocado, chopped 
  • 2 tbsp olive oil 
  • 2 tbsp white wine vinegar 
  • 1 tsp caster sugar 
  • 2 tsp finely chopped fresh basil 

Instructions

  1. Bring a saucepan of water to the boil over high heat. Cook beans for 3 minutes or until just tender. Drain. Refresh in a bowl of iced water. Drain. Pat dry with paper towel.
  2. Make Basil dressing: Place oil, vinegar, sugar and basil in a screw-top jar. Season. Secure lid. Shake to combine. 3 Arrange lettuce on a platter. Top with radish, beans and avocado. Drizzle with dressing. Serve.
