To make this dish at home by prescription from the author Gomer would need: 60g walnut pieces, 2 tbsp olive oil, 1 tbsp red wine vinegar, Salt & freshly ground black pepper, 200g baby spinach leaves, washed, dried , 120g semi-dried tomatoes, 100g blue cheese , crumbled .

Ingredients:

  • 60g walnut pieces 
  • 2 tbsp olive oil 
  • 1 tbsp red wine vinegar 
  • Salt & freshly ground black pepper 
  • 200g baby spinach leaves, washed, dried 
  • 120g semi-dried tomatoes 
  • 100g blue cheese , crumbled 

Instructions

  1. Preheat oven to 180°C. Spread the walnuts on a baking tray. Cook in preheated oven for 5-8 minutes or until aromatic and toasted. Roughly chop.
  2. Combine the walnuts, oil and vinegar in a small screw-top jar. Shake well to combine. Taste and season with salt and pepper.
  3. Place spinach, tomatoes and blue cheese in a large bowl. Drizzle with walnut dressing and toss gently to combine. Serve immediately.
