Green leaf salad with strawberry balsamic vinaigrette

To make this dish at home by prescription from the author Gomer would need: 1 yellow witlof, leaves separated, 1 bunch rocket, trimmed, 3 stalks red kale, leaves chopped, 125g strawberries, hulled, halved, 1/4 cup natural almond kernels, toasted , 125g strawberries, hulled, halved, 2 tbsp grapeseed oil, 1 tbsp honey , 3 tsp balsamic vinegar, 1 tbsp finely chopped fresh basil leaves.

Ingredients:

  • 1 yellow witlof, leaves separated 
  • 1 bunch rocket, trimmed 
  • 3 stalks red kale, leaves chopped 
  • 125g strawberries, hulled, halved 
  • 1/4 cup natural almond kernels, toasted 
  • 125g strawberries, hulled, halved 
  • 2 tbsp grapeseed oil 
  • 1 tbsp honey 
  • 3 tsp balsamic vinegar 
  • 1 tbsp finely chopped fresh basil leaves 

Instructions

  1. Make Strawberry Balsamic Vinaigrette Place strawberries, oil, honey and vinegar in a small food processor. Process until smooth. Season with salt and pepper. Stir in basil (see notes).
  2. Place witlof, rocket, kale, strawberries and almonds on a serving plate. Drizzle with dressing. Serve.
