To make this dish at home by prescription from the author sheff would need: 120g baby kale, 3 cups almond meal, 2 1/2 tsp baking powder, 1 tsp sea salt, 4 eggs , 1/3 cup macadamia oil, 1 tbsp lemon juice, 2 tsp honey .

Ingredients:

  • 120g baby kale 
  • 3 cups almond meal 
  • 2 1/2 tsp baking powder 
  • 1 tsp sea salt 
  • 4 eggs 
  • 1/3 cup macadamia oil 
  • 1 tbsp lemon juice 
  • 2 tsp honey 

Instructions

  1. Preheat oven to 180C/160C fan forced. Grease a 9.5 x 19.5cm loaf pan. Line with baking paper.
  2. Finely process baby kale in a food processor. Combine kale, almond meal, baking powder and salt in a bowl. Whisk eggs, oil, lemon juice and honey in a jug. Add to kale mixture. Stir.
  3. Spoon into prepared pan. Bake for 45-50 minutes or until a skewer inserted comes out clean.
