Ingredients:

  • 800g sebago potatoes 
  • 1 tbsp olive oil 
  • 1 leek, trimmed, halved, washed, thinly sliced 
  • 2 garlic cloves, thinly sliced 
  • 400g piece double smoked ham, diced 
  • 535g can country chicken soup 
  • 100g tasty cheese, grated 

Instructions

  1. Preheat oven to 180°C/160°C fan-forced. Lightly grease a 6 cup-capacity baking dish.
  2. Bring a saucepan of water to the boil over high heat. Cook potatoes for 12 to 15 minutes or until just tender. Drain. Transfer to a bowl. Stand for 10 minutes. Slice potatoes.
  3. Meanwhile, heat oil in a large frying pan over medium-high heat. Add leek. Cook, stirring, for 5 minutes or until softened. Add garlic and ham. Cook for 2 minutes. Stir in soup. Transfer to a large bowl. Add potatoes. Season with pepper. Stir gently to coat in mixture.
  4. Spoon into prepared dish. Sprinkle with the cheese. Bake for 30 minutes or until cheese is golden. Stand for 5 minutes. Serve.
