Spicy prawn soup

Heat up your evening with this spicy prawn soup.

To make this dish at home by prescription from the author sheff would need: 100g rice stick noodles, 1 tbsp tom yum paste, 1L chicken stock, 1 cup green beans, cut into 3cm lengths, 150g small button mushrooms, halved , 20 green prawns, peeled, deveined, tails intact, 12 cherry tomatoes, halved, Coriander leaves and lime wedges, to serve .
Ingredients:
- 100g rice stick noodles
- 1 tbsp tom yum paste
- 1L chicken stock
- 1 cup green beans, cut into 3cm lengths
- 150g small button mushrooms, halved
- 20 green prawns, peeled, deveined, tails intact
- 12 cherry tomatoes, halved
- Coriander leaves and lime wedges, to serve
Instructions
- Place noodles in a large heatproof bowl, pour over boiling water to cover and soak for 5 minutes or until softened. Drain and set aside.
- Stir paste in a large saucepan over medium heat for 1-2 minutes until fragrant.
- Add stock, bring to the boil, then reduce heat to medium-low, add beans and mushrooms and simmer for 1 minute. Add prawns and cook for a further 1-2 minutes until prawns are just cooked.
- Place noodles in bowls and top with tomatoes. Pour over soup, garnish with coriander and serve with lime.
