To make this dish at home by prescription from the author sheff would need: 2 tsp olive oil, 1 onion, chopped, 4 cups vegetable stock, 800g can chopped tomatoes, 2 medium carrots, peeled and chopped , 2 medium zucchini, chopped, 2 potatoes, peeled and chopped, 1/2 cup dried pasta spirals , 1/4 cup fresh parsley, chopped.

Ingredients:

  • 2 tsp olive oil 
  • 1 onion, chopped 
  • 4 cups vegetable stock 
  • 800g can chopped tomatoes 
  • 2 medium carrots, peeled and chopped 
  • 2 medium zucchini, chopped 
  • 2 potatoes, peeled and chopped 
  • 1/2 cup dried pasta spirals 
  • 1/4 cup fresh parsley, chopped 

Instructions

  1. In a large saucepan heat oil over a medium heat. Add onion to pan and cook for 2-3 minutes until softened.
  2. Pour stock and tomatoes into pan, bring to a simmer, add carrots, zucchini and potatoes. Cover, cook for 20 minutes, stirring occasionally.
  3. Remove lid, stir pasta into soup and cook for a further 15 minutes, until pasta is cooked.
  4. Sprinkle soup with fresh parsley to serve. Serve with crusty bread or toast.
