Clam chowder

Somewhere between a soup and a stew, this one-pot wonder features a mouth-watering mix of clams, bacon and potato.

To make this dish at home by prescription from the author sheff would need: 20g butter, 1 large onion, finely chopped, 2 large potatoes, diced, 225g diced bacon or smoked bacon ribs, 2 cups milk , 1 cup Massel chicken style liquid stock, 1 cup cream, 1 clove garlic, crushed , 200g can clams, drained, 2 tbsp chopped fresh parsley, Freshly ground black pepper.
Ingredients:
- 20g butter
- 1 large onion, finely chopped
- 2 large potatoes, diced
- 225g diced bacon or smoked bacon ribs
- 2 cups milk
- 1 cup Massel chicken style liquid stock
- 1 cup cream
- 1 clove garlic, crushed
- 200g can clams, drained
- 2 tbsp chopped fresh parsley
- Freshly ground black pepper
Instructions
- Melt butter in a large pan over medium heat. Add onion and cook until soft.
- Add potatoes and bacon or ribs. The bones will add extra flavour.
- Cook, stirring over low heat for about 30 minutes until golden.
- Stir in milk, stock, cream, garlic and clams. Simmer gently for 10 minutes. Stir in parsley. Season with pepper. Serve.
