Somewhere between a soup and a stew, this one-pot wonder features a mouth-watering mix of clams, bacon and potato.

To make this dish at home by prescription from the author sheff would need: 20g butter, 1 large onion, finely chopped, 2 large potatoes, diced, 225g diced bacon or smoked bacon ribs, 2 cups milk , 1 cup Massel chicken style liquid stock, 1 cup cream, 1 clove garlic, crushed , 200g can clams, drained, 2 tbsp chopped fresh parsley, Freshly ground black pepper.

Ingredients:

  • 20g butter 
  • 1 large onion, finely chopped 
  • 2 large potatoes, diced 
  • 225g diced bacon or smoked bacon ribs 
  • 2 cups milk 
  • 1 cup Massel chicken style liquid stock 
  • 1 cup cream 
  • 1 clove garlic, crushed 
  • 200g can clams, drained 
  • 2 tbsp chopped fresh parsley 
  • Freshly ground black pepper 

Instructions

  1. Melt butter in a large pan over medium heat. Add onion and cook until soft.
  2. Add potatoes and bacon or ribs. The bones will add extra flavour.
  3. Cook, stirring over low heat for about 30 minutes until golden.
  4. Stir in milk, stock, cream, garlic and clams. Simmer gently for 10 minutes. Stir in parsley. Season with pepper. Serve.
