To make this dish at home by prescription from the author sheff would need: 2 tbsp extra virgin olive oil, 1 onion, finely chopped, 1 carrot, chopped, 1L Massel chicken style liquid stock, 300g cheese tortellini , 400g can cannellini beans, rinsed, drained, 1/2 cup frozen peas, 2 tbsp basil pesto, plus extra to serve , Shaved parmesan, to serve.

Ingredients:

  • 2 tbsp extra virgin olive oil 
  • 1 onion, finely chopped 
  • 1 carrot, chopped 
  • 1L Massel chicken style liquid stock 
  • 300g cheese tortellini 
  • 400g can cannellini beans, rinsed, drained 
  • 1/2 cup frozen peas 
  • 2 tbsp basil pesto, plus extra to serve 
  • Shaved parmesan, to serve 

Instructions

  1. Heat the oil in a large saucepan over medium-high heat. Add the onion and cook for 2 minutes until soft. Add the carrot and cook for a further minute.
  2. Add the stock and bring to the boil. Reduce the heat to medium-low and simmer for 10 minutes. Add the tortellini and simmer for a further 8 minutes until just cooked. Add the beans and peas, then simmer for a further 2 minutes to heat through. Stir in the pesto.
  3. Divide the soup among bowls and serve topped with shaved parmesan, plus extra pesto if desired.
