To make this dish at home by prescription from the author sheff would need: 2.5L chicken stock, 125ml soy sauce, 5cm-piece fresh ginger, peeled, cut into matchsticks, 2 garlic cloves, crushed, 1 x 125g pkt baby corn, diagonally cut in half , 1 x 100g pkt shiitake mushrooms, sliced, 2 x 250g pkts frozen yum cha dim sim, 1 x 230g can bamboo shoots, rinsed, drained , 1 x 175g pkt baby bok choy or 3 baby bok choy, bases trimmed, leaves separated, 100g snow peas, trimmed, thinly sliced lengthways, 4 green shallots, ends trimmed, diagonally thinly sliced, Pinch of salt.

Ingredients:

  • 2.5L chicken stock 
  • 125ml soy sauce 
  • 5cm-piece fresh ginger, peeled, cut into matchsticks 
  • 2 garlic cloves, crushed 
  • 1 x 125g pkt baby corn, diagonally cut in half 
  • 1 x 100g pkt shiitake mushrooms, sliced 
  • 2 x 250g pkts frozen yum cha dim sim 
  • 1 x 230g can bamboo shoots, rinsed, drained 
  • 1 x 175g pkt baby bok choy or 3 baby bok choy, bases trimmed, leaves separated 
  • 100g snow peas, trimmed, thinly sliced lengthways 
  • 4 green shallots, ends trimmed, diagonally thinly sliced 
  • Pinch of salt 

Instructions

  1. Place chicken stock, soy sauce, ginger and garlic in a saucepan and bring to the boil over high heat. Reduce to medium and add corn and mushrooms. Cook, stirring occasionally, for 3 minutes.
  2. Add the dim sims and cook for a further 3 minutes or until the dim sims are heated through.
  3. Stir in bamboo shoots, baby bok choy, snow peas and half the shallots. Cook for 1 minute or until bok choy just wilts. Remove from heat. Taste and season with salt. Serve in noodle bowls sprinkled with the remaining shallots.
