To make this dish at home by prescription from the author sheff would need: 2 slices woodfired bread, crusts removed, 2 tbsp sherry vinegar, 2 x 400g cans chopped tomatoes, 1 Lebanese cucumber, peeled and seeded, 1 red capsicum, seeded and roughly chopped , 1/2 tsp ground cumin, 4-5 drops Tabasco sauce, 1/4 cup olive oil , salt and cracked black pepper, 2 Lebanese cucumbers, seeded , extra, 100g smoked salmon slices, cut into long strips.

Ingredients:

  • 2 slices woodfired bread, crusts removed 
  • 2 tbsp sherry vinegar 
  • 2 x 400g cans chopped tomatoes 
  • 1 Lebanese cucumber, peeled and seeded 
  • 1 red capsicum, seeded and roughly chopped 
  • 1/2 tsp ground cumin 
  • 4-5 drops Tabasco sauce 
  • 1/4 cup olive oil 
  • salt and cracked black pepper 
  • 2 Lebanese cucumbers, seeded , extra 
  • 100g smoked salmon slices, cut into long strips 

Instructions

  1. Place the bread in a bowl and drizzle with vinegar. Set aside for 5 minutes.
  2. Transfer the moist bread to a blender or food processor, along with the tomato, cucumber, capsicum, cumin, Tabasco sauce and 3/4 cup of water. Process until very smooth. With the motor running, slowly add the oil in a thin, steady stream until well combined. Season with salt and pepper. Place in the fridge to chill.
  3. Cut the extra cucumbers into long batons. Wrap a little smoked salmon around each baton. Serve chilled gazpacho with the salmon-wrapped cucumber.
