To make this dish at home by prescription from the author sheff would need: 1L chicken stock, 1/3 cup light soy sauce, 2 star anise, 4 slices fresh ginger, 350g packet frozen prawn wontons , 2 baby bok choy, sliced thickly, 1 long red chilli, seeds removed, thinly sliced, 1/2 cup coriander leaves .

Ingredients:

  • 1L chicken stock 
  • 1/3 cup light soy sauce 
  • 2 star anise 
  • 4 slices fresh ginger 
  • 350g packet frozen prawn wontons 
  • 2 baby bok choy, sliced thickly 
  • 1 long red chilli, seeds removed, thinly sliced 
  • 1/2 cup coriander leaves 

Instructions

  1. Place the stock, soy, star anise and ginger in a saucepan with 2 cups (500ml) water. Bring to the boil, then simmer over low heat for 15 minutes until fragrant. Discard the ginger.
  2. Increase heat to medium, then stir the wontons into the simmering stock. Once they rise to the surface, cook for a further 1 minute, then add the bok choy. Continue to cook for a further 1 minute or until the wontons are cooked through and greens are wilted. Divide the soup, wontons and bok choy among bowls, then serve garnished with sliced chilli and coriander.
