To make this dish at home by prescription from the author sheff would need: 1L chicken stock, 1/3 cup light soy sauce, 2 star anise, 4 slices fresh ginger, 350g packet frozen prawn wontons , 2 baby bok choy, sliced thickly, 1 long red chilli, seeds removed, thinly sliced, 1/2 cup coriander leaves .
Ingredients:
- 1L chicken stock
- 1/3 cup light soy sauce
- 2 star anise
- 4 slices fresh ginger
- 350g packet frozen prawn wontons
- 2 baby bok choy, sliced thickly
- 1 long red chilli, seeds removed, thinly sliced
- 1/2 cup coriander leaves
Instructions
- Place the stock, soy, star anise and ginger in a saucepan with 2 cups (500ml) water. Bring to the boil, then simmer over low heat for 15 minutes until fragrant. Discard the ginger.
- Increase heat to medium, then stir the wontons into the simmering stock. Once they rise to the surface, cook for a further 1 minute, then add the bok choy. Continue to cook for a further 1 minute or until the wontons are cooked through and greens are wilted. Divide the soup, wontons and bok choy among bowls, then serve garnished with sliced chilli and coriander.
