These gluten free blueberry pancakes are simply delicious and made easy with Coles Simply Gluten Free Pancake Mix.

To make this dish at home by prescription from the author Gomer would need: 2 cups frozen blueberries, 1 lemon, zest and juice, 1/2 cup icing sugar, plus extra to dust, 375g Coles simply gluten free pancake mix, 3 eggs, lightly beaten , 1 cup water, 20g butter, 1/2 cup ricotta, to serve .

Ingredients:

  • 2 cups frozen blueberries 
  • 1 lemon, zest and juice 
  • 1/2 cup icing sugar, plus extra to dust 
  • 375g Coles simply gluten free pancake mix 
  • 3 eggs, lightly beaten 
  • 1 cup water 
  • 20g butter 
  • 1/2 cup ricotta, to serve 

Instructions

  1. Combine berries, lemon zest, and icing sugar in a small saucepan. Cook over medium heat for 5-6 mins, until syrupy. Remove from heat and allow to cool.
  2. In a medium bowl combine Coles Simply Gluten Free Pancake Mix, eggs and water. Whisk until combined. Stand for 3-4 mins.
  3. Wrap butter in a piece of paper towel. Heat a nonstick frying pan to medium heat and grease with butter. Using 1/3 cup measurement, cook batter in batches, for 1-2 mins each side, until bubbles appear on the surface. Flip and cook for a further 1-2 mins, until golden and cooked through. Serve pan with ricotta and blueberry compote, dusted with icing sugar and garnished with a mint sprig, if desired.
