A tasty meal doesnt get easier than wrapping noodles in an omelette.

To make this dish at home by prescription from the author Gomer would need: 8 eggs, lightly whisked, 2 spring onions , thinly sliced, 1 tbsp cold water, 1 tbsp peanut oil, 4 x 85g pkts Indomie Mi Goreng Instant Noodles , 1 cucumber, peeled into ribbons, 1 carrot, peeled into ribbons, Cherry tomatoes, quartered, to serve , Spring onions , thinly sliced, extra, to serve.
Ingredients:
- 8 eggs, lightly whisked
- 2 spring onions , thinly sliced
- 1 tbsp cold water
- 1 tbsp peanut oil
- 4 x 85g pkts Indomie Mi Goreng Instant Noodles
- 1 cucumber, peeled into ribbons
- 1 carrot, peeled into ribbons
- Cherry tomatoes, quartered, to serve
- Spring onions , thinly sliced, extra, to serve
Instructions
- Combine egg, spring onion and water in a bowl. Heat 1 tsp oil in a wok over medium heat. Add one-quarter of the egg mixture. Swirl to coat. Cook for 2 minutes or until just set. Transfer to a plate. Repeat with remaining oil and egg mixture to make 4 omelettes.
- Prepare the noodles following packet directions. Transfer to a bowl. Add cucumber and carrot. Toss to combine.
- Divide omelettes among plates. Top with noodle mixture, tomato and spring onion. Fold the omelettes in half.
