Pear and orange sponge pudding

Sweet pears and zesty oranges lend an interesting twist to this traditional sponge pudding.

To make this dish at home by prescription from the author Gomer would need: 3 eggs, separated, 1 cup caster sugar, 1 cup low-fat milk, 1/2 cup self-raising flour, sifted, 1/4 cup orange juice , 2 tsp grated orange zest, 4 pears, cored, cut into eighths, Whipped cream, to serve .

Ingredients:

  • 3 eggs, separated 
  • 1 cup caster sugar 
  • 1 cup low-fat milk 
  • 1/2 cup self-raising flour, sifted 
  • 1/4 cup orange juice 
  • 2 tsp grated orange zest 
  • 4 pears, cored, cut into eighths 
  • Whipped cream, to serve 

Instructions

  1. Preheat oven to 180C. Spray a 24cm dish, or 6 x 1 1/4-cup ramekins, lightly with oil.
  2. In a small bowl, using an electric mixer, beat egg yolks and half the sugar until thick and creamy. Transfer to a large bowl. Stir in milk, flour, orange juice and zest.
  3. In a small, clean bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add remaining sugar, beating well until thick and glossy. Lightly fold orange mixture through.
  4. Arrange pear pieces in prepared dish. Pour mixture over. Place in a large baking pan.
  5. Add enough just-boiled water to come halfway up the sides of the dish (or ramekins). Bake for 35-40 mins, until lightly browned and firm to touch. Serve with cream.
