Lemon syrup cakes

A sponge cake made extra moist and sticky by the addition of lemon syrup.

To make this dish at home by prescription from the author Gomer would need: 1 cup caster sugar, 1 cup self-raising flour, 40ml milk, 2 eggs, 1 lemon, finely grated, rind only , 125g butter, melted, Reserved lemon juice, 1 tbsp caster sugar .
Ingredients:
- 1 cup caster sugar
- 1 cup self-raising flour
- 40ml milk
- 2 eggs
- 1 lemon, finely grated, rind only
- 125g butter, melted
- Reserved lemon juice
- 1 tbsp caster sugar
Instructions
- Preheat oven to 190C or 170C fan-forced.
- Place all ingredients, except those for syrup, into a bowl and mix with wooden spoon until smooth.
- Grease a 6-hole Texas muffin pan. Place 1/3 cup of mixture into each hole. Bake for 20 mins. Stand for 5 mins turn out onto a wire rack. Drizzle with syrup while warm.
- Syrup: Mix juice and sugar in a small saucepan and cook over medium heat for 5 mins until slightly thickened.
