Ingredients:

  • 300g self-raising flour 
  • 2 tbsp caster sugar 
  • 375ml milk 
  • 2 eggs 
  • 1 tsp vanilla essence 
  • Vegetable oil, to deep-fry 
  • Icing sugar, to dust 
  • Ice cream, to serve 
  • Caramel sauce, to serve 

Instructions

  1. Sift flour, sugar and a pinch of salt into a large bowl. Make a well in the centre. Whisk milk, eggs and vanilla essence in a jug. Slowly whisk milk mixture into well until combined.
  2. Half-fill a 20cm saucepan with oil and heat to 180C over medium-high heat. Hold a finger over the opening of a funnel or piping bag with a 1cm-nozzle, and pour in 1/2 cup of the batter. Carefully drizzle batter into the hot oil, covering surface in a lacy pattern. Cook for 1 minute each side or until golden. Drain on paper towel.
  3. Repeat to make 6 cakes. Dust with icing sugar. Serve with ice-cream and caramel sauce.
