Salad nicoise with rice

To make this dish at home by prescription from the author Gomer would need: 70g green beans, halved lengthways, 125g tub microwave long-grain white rice, 1 baby gem lettuce, leaves separated, torn, 6 grape tomatoes, halved, 2 tbsp marinated split green olives , 1 anchovy fillet, drained, chopped, 95g can tuna in oil, 1/2 tsp Dijon mustard , 3 tsp red wine vinegar, 1 hard-boiled egg, halved.
Ingredients:
- 70g green beans, halved lengthways
- 125g tub microwave long-grain white rice
- 1 baby gem lettuce, leaves separated, torn
- 6 grape tomatoes, halved
- 2 tbsp marinated split green olives
- 1 anchovy fillet, drained, chopped
- 95g can tuna in oil
- 1/2 tsp Dijon mustard
- 3 tsp red wine vinegar
- 1 hard-boiled egg, halved
Instructions
- Place beans in a bowl. Cover with boiling water. Stand for 1 minute or until bright green and just tender. Drain. Refresh under cold water. Drain.
- Microwave rice following packet directions.
- Meanwhile, place beans, lettuce, tomato, olives, anchovy, undrained tuna, mustard and vinegar in a large bowl. Add rice. Season with salt and pepper. Toss gently to combine. Serve with hard-boiled egg.
