To make this dish at home by prescription from the author Gomer would need: 70g green beans, halved lengthways, 125g tub microwave long-grain white rice, 1 baby gem lettuce, leaves separated, torn, 6 grape tomatoes, halved, 2 tbsp marinated split green olives , 1 anchovy fillet, drained, chopped, 95g can tuna in oil, 1/2 tsp Dijon mustard , 3 tsp red wine vinegar, 1 hard-boiled egg, halved.

Ingredients:

  • 70g green beans, halved lengthways 
  • 125g tub microwave long-grain white rice 
  • 1 baby gem lettuce, leaves separated, torn 
  • 6 grape tomatoes, halved 
  • 2 tbsp marinated split green olives 
  • 1 anchovy fillet, drained, chopped 
  • 95g can tuna in oil 
  • 1/2 tsp Dijon mustard 
  • 3 tsp red wine vinegar 
  • 1 hard-boiled egg, halved 

Instructions

  1. Place beans in a bowl. Cover with boiling water. Stand for 1 minute or until bright green and just tender. Drain. Refresh under cold water. Drain.
  2. Microwave rice following packet directions.
  3. Meanwhile, place beans, lettuce, tomato, olives, anchovy, undrained tuna, mustard and vinegar in a large bowl. Add rice. Season with salt and pepper. Toss gently to combine. Serve with hard-boiled egg.
