Use these creamy herb mayonnaise to dress up potato salads or slaw.

To make this dish at home by prescription from the author Gomer would need: 4 egg yolks, 2 tsp dijon mustard, 1 tbsp cider vinegar, 2 tsp salt, 1/2 tsp white pepper , 2 cups extra light olive oil, 1 tbsp fresh dill, finely chopped, 1 tbsp fresh flat-leaf parsley leaves, finely chopped .
Ingredients:
- 4 egg yolks
- 2 tsp dijon mustard
- 1 tbsp cider vinegar
- 2 tsp salt
- 1/2 tsp white pepper
- 2 cups extra light olive oil
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh flat-leaf parsley leaves, finely chopped
Instructions
- Process yolks, mustard, vinegar, salt and pepper in food processor until combined.
- With motor operating, add oil in a slow, steady stream until mixture is thick and creamy. Transfer to a bowl. Add 1 tablespoon warm water. Stir to combine.
- Stir dill and parsley into mayonnaise.
