This fresh stir fry recipe combines egg noodles, prawns, asparagus and a light peanut, chilli and lime sauce.

To make this dish at home by prescription from the author Gomer would need: 270g soba noodles, 1 bunch asparagus, each spear cut diagonally into 4 pieces, 300g cooked peeled prawns, 50g snow pea sprouts, trimmed, 1 Lebanese cucumber, halved lengthways and sliced , 4 spring onions, finely sliced diagonally, 2 tbsp peanut oil, 2 tbsp lime juice , 1 1/2 tbsp sweet chilli sauce, 1 tsp fish sauce.

Ingredients:

  • 270g soba noodles 
  • 1 bunch asparagus, each spear cut diagonally into 4 pieces 
  • 300g cooked peeled prawns 
  • 50g snow pea sprouts, trimmed 
  • 1 Lebanese cucumber, halved lengthways and sliced 
  • 4 spring onions, finely sliced diagonally 
  • 2 tbsp peanut oil 
  • 2 tbsp lime juice 
  • 1 1/2 tbsp sweet chilli sauce 
  • 1 tsp fish sauce 

Instructions

  1. Cook noodles in a large pan of boiling water according to packet directions. Add asparagus to pan for the last 2 mins of cooking. Drain noodles and asparagus into a colander, rinse under cold running water. Drain well.
  2. Place noodles, asparagus, prawns, cucumber, spring onions and sprouts in a large bowl.
  3. Dressing: Combine oil, lime juice, sweet chilli sauce and fish sauce in a small screw top jar. Shake until well combined.
  4. Drizzle the dressing over the salad and use clean hands to gently turn and combine the ingredients thoroughly. Serve salad chilled or at room temperature.
