To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups brown rice, 1 tbsp peanut oil, 600g Coles Australian Beef Eye Fillet Steak, thinly sliced, 1 bunch baby broccoli, halved diagonally, 125g pkt baby corn, halved lengthways , 1 tbsp ginger, finely grated, 2 garlic cloves, crushed, 4 spring onions, thinly sliced , 1 long red chilli, thinly sliced, 1 1/2 tbsp salt-reduced soy sauce, 4 Coles Brand Australian Free Range Eggs, 1/4 cup coriander leaves, Sliced red chilli, extra to serve.

Ingredients:

  • 1 1/2 cups brown rice 
  • 1 tbsp peanut oil 
  • 600g Coles Australian Beef Eye Fillet Steak, thinly sliced 
  • 1 bunch baby broccoli, halved diagonally 
  • 125g pkt baby corn, halved lengthways 
  • 1 tbsp ginger, finely grated 
  • 2 garlic cloves, crushed 
  • 4 spring onions, thinly sliced 
  • 1 long red chilli, thinly sliced 
  • 1 1/2 tbsp salt-reduced soy sauce 
  • 4 Coles Brand Australian Free Range Eggs 
  • 1/4 cup coriander leaves 
  • Sliced red chilli, extra to serve 

Instructions

  1. Cook the rice in a saucepan of salted boiling water following packet directions. Drain and set aside to cool.
  2. Heat half the oil in a wok over medium-high heat. Season the beef. Cook, in batches, for 1-2 mins or until browned. Transfer to a plate.
  3. Add the baby broccoli, baby corn and 1/4 cup (60ml) water. Cook for 3 mins. Add ginger, garlic, spring onion and chilli and cook for 2 mins. Return beef to the wok with the soy sauce and rice. Stir-fry for 3 mins or until heated through.
  4. Meanwhile, heat a frying pan over medium heat. Fry eggs for 3 mins or until cooked to your liking. Divide fried rice among bowls. Top with fried egg, coriander leaves and extra sliced chilli.
