Creamed corn is a sweet and creamy filling to these healthy egg white omelettes.

Ingredients:
- 8 eggwhites
- 1/2 cup creamed corn
- 20g butter
- sour cream and fresh dill sprigs, to serve
Instructions
- Place eggwhites and corn in a bowl. Season with pepper. Beat lightly with a fork until just combined. Preheat grill on high.
- Melt half the butter in a large frying pan over medium-high heat. Pour half the egg mixture into pan. Tilt pan so egg covers base. Cook for 2 minutes or until egg is almost set.
- Place pan under grill. Grill until lightly browned. Slide omelette onto plate. Cover to keep warm. Repeat with remaining butter and egg mixture.
- Place omelettes on plates. Top with sour cream and dill. Serve.
