To make this dish at home by prescription from the author sheff would need: 1 1/2 cups cooked potato, 125g sliced pastrami, chopped, 1 tbsp honey wholegrain mustard, 1/2 cup fresh breadcrumbs, 3 green onions, thinly sliced , 1/2 cup plain flour, 1/4 cup olive oil, 4 eggs , 1/2 cup tomato chutney, Mixed salad leaves, to serve.

Ingredients:

  • 1 1/2 cups cooked potato 
  • 125g sliced pastrami, chopped 
  • 1 tbsp honey wholegrain mustard 
  • 1/2 cup fresh breadcrumbs 
  • 3 green onions, thinly sliced 
  • 1/2 cup plain flour 
  • 1/4 cup olive oil 
  • 4 eggs 
  • 1/2 cup tomato chutney 
  • Mixed salad leaves, to serve 

Instructions

  1. Place cooked potato in a large bowl and roughly mash. Add pastrami, wholegrain mustard, breadcrumbs and green onion. Mix well to combine. Place flour on a plate. Using 1/4 cup of mixture at a time, shape the potato mixture into 8 patties. Lightly coat patties in the flour, shaking off excess.
  2. Heat 2 tablespoons oil in a large frying pan over medium heat. Cook patties, in batches, for 5 to 7 minutes or until warmed through and golden. Transfer to a plate. Cover with foil to keep warm.
  3. Heat remaining oil in pan over high heat. Crack eggs into pan. Cook for 3 minutes or until cooked to your liking. Serve potato patties with eggs, chutney and salad.
