Wholemeal wraps with smoked ocean trout and egg and lettuce coleslaw

To make this dish at home by prescription from the author sheff would need: 4 sheets wholemeal mountain bread, 100g smoked ocean trout, sliced, 4 hard boiled eggs, peeled and chopped, 300g iceberg lettuce, coarsely shredded, 4 tbsp good quality mayonnaise , 2 tsp finely grated lemon rind, 2 tsp finely chopped capers, Salt & freshly ground black pepper .
Ingredients:
- 4 sheets wholemeal mountain bread
- 100g smoked ocean trout, sliced
- 4 hard boiled eggs, peeled and chopped
- 300g iceberg lettuce, coarsely shredded
- 4 tbsp good quality mayonnaise
- 2 tsp finely grated lemon rind
- 2 tsp finely chopped capers
- Salt & freshly ground black pepper
Instructions
- Lay bread on a board and divide smoked ocean trout along one edge of each piece of bread. In a large bowl, toss egg and lettuce together.
- In a small bowl, whisk together mayonnaise, lemon rind and capers. Season with salt and pepper and fold through the egg and lettuce.
- Pile salad onto wraps and roll up firmly to enclose. Slice in half and serve immediately.
