To make this dish at home by prescription from the author sheff would need: 4 sheets wholemeal mountain bread, 100g smoked ocean trout, sliced, 4 hard boiled eggs, peeled and chopped, 300g iceberg lettuce, coarsely shredded, 4 tbsp good quality mayonnaise , 2 tsp finely grated lemon rind, 2 tsp finely chopped capers, Salt & freshly ground black pepper .

Ingredients:

  • 4 sheets wholemeal mountain bread 
  • 100g smoked ocean trout, sliced 
  • 4 hard boiled eggs, peeled and chopped 
  • 300g iceberg lettuce, coarsely shredded 
  • 4 tbsp good quality mayonnaise 
  • 2 tsp finely grated lemon rind 
  • 2 tsp finely chopped capers 
  • Salt & freshly ground black pepper 

Instructions

  1. Lay bread on a board and divide smoked ocean trout along one edge of each piece of bread. In a large bowl, toss egg and lettuce together.
  2. In a small bowl, whisk together mayonnaise, lemon rind and capers. Season with salt and pepper and fold through the egg and lettuce.
  3. Pile salad onto wraps and roll up firmly to enclose. Slice in half and serve immediately.
