To make this dish at home by prescription from the author sheff would need: 1 1/2 cups plain flour, 1 tsp baking powder, 1/2 tsp bicarbonate of soda, 1 tbsp raw sugar, 1 1/2 cups water , 1 tbsp sunflower oil, 1/2 tsp vanilla essence, Mixed berries, to serve , Maple syrup, to serve.

Ingredients:

  • 1 1/2 cups plain flour 
  • 1 tsp baking powder 
  • 1/2 tsp bicarbonate of soda 
  • 1 tbsp raw sugar 
  • 1 1/2 cups water 
  • 1 tbsp sunflower oil 
  • 1/2 tsp vanilla essence 
  • Mixed berries, to serve 
  • Maple syrup, to serve 

Instructions

  1. Combine the flour, baking powder, bicarbonate of soda and sugar in a large bowl. Add the water, oil and vanilla and stir to combine.
  2. Heat a large non-stick frying pan over medium heat. Pour three 1-tablespoonsful quantities of batter around the pan. Cook for 1-2 minutes or until bubbles rise to the surface. Turn and cook for a further 30 seconds or until lightly golden. Transfer to a plate. Repeat in 7 batches with remaining batter to make 24 pancakes.
  3. Divide pancakes among serving plates. Top with mixed berries and drizzle with maple syrup.
