Ingredients:

  • 2 reduced-fat beef sausages, casings removed, coarsely chopped, rolled into tsp balls 
  • 4 small eggs, lightly whisked 
  • 1/4 cup milk 
  • 6 mini flour tortillas 

Instructions

  1. Heat a medium frying pan over medium heat. Add sausages and cook, stirring with a wooden spoon, for 5-6 or until sausage meatballs are golden brown all over and cooked through. Transfer to a plate.
  2. Meanwhile, whisk eggs and milk together in a small bowl. Add to frying pan and cook, stirring occasionally, with a flat-edge wooden spoon, for 2-3 minutes or until eggs are cooked to your liking. Remove from heat.
  3. Spoon sausage meatballs and scrambled egg among tortillas, fold to enclose. Serve immediately.
