To make this dish at home by prescription from the author sheff would need: 1 tbsp olive oil, 500g Coles Australian 4 Star Lean Beef Mince, 1 brown onion, thinly sliced, 3 garlic cloves, crushed, 1 tbsp ground coriander , 1 tsp dried chilli flakes, 400g can tomato puree, 250g green beans, trimmed, chopped , 60g baby spinach leaves, 4 Coles Brand Australian Free Range Eggs, Mint sprigs, to serve, Chilli flakes, extra, to serve, Coles Bakery Pane di Casa, to serve.

Ingredients:

  • 1 tbsp olive oil 
  • 500g Coles Australian 4 Star Lean Beef Mince 
  • 1 brown onion, thinly sliced 
  • 3 garlic cloves, crushed 
  • 1 tbsp ground coriander 
  • 1 tsp dried chilli flakes 
  • 400g can tomato puree 
  • 250g green beans, trimmed, chopped 
  • 60g baby spinach leaves 
  • 4 Coles Brand Australian Free Range Eggs 
  • Mint sprigs, to serve 
  • Chilli flakes, extra, to serve 
  • Coles Bakery Pane di Casa, to serve 

Instructions

  1. Heat the oil in a large saucepan over medium-high heat. Add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until browned. Add onion and cook for 2 mins or until just softened. Add the garlic, coriander and chilli flakes. Cook for 30 secs or until fragrant. Add the tomato puree and ½ cup (125ml) water. Bring to a simmer. Reduce heat to low. Simmer for 5 mins or until mixture thickens.
  2. Add green beans. Cook, stirring, for 2 mins. Stir in the spinach. Make 4 indents in beef mixture. Crack 1 egg into each indent. Cover. Cook for 3 mins or until egg whites are just set.
  3. Sprinkle with mint and extra chilli flakes. Serve with bread.
