Bacon and egg pies

To make this dish at home by prescription from the author sheff would need: 200g packet Coles Brand streaky bacon, 6 Coles Brand Australian free range eggs, 1/3 cup milk, 1 clove garlic, crushed, 1/2 cup tasty cheddar, grated , 1/4 cup basil, chopped, 4 Perino tomatoes, halved, Mixed salad leaves, to serve , Perino tomatoes, extra, to serve, Coles Bakery Pane di casa, sliced, to serve.
Ingredients:
- 200g packet Coles Brand streaky bacon
- 6 Coles Brand Australian free range eggs
- 1/3 cup milk
- 1 clove garlic, crushed
- 1/2 cup tasty cheddar, grated
- 1/4 cup basil, chopped
- 4 Perino tomatoes, halved
- Mixed salad leaves, to serve
- Perino tomatoes, extra, to serve
- Coles Bakery Pane di casa, sliced, to serve
Instructions
- Preheat oven to 200C. Grease 4 holes of a 1 cup (250ml) Texas muffin pan. Line base and side of each hole with 2 bacon rashers, cutting to fit.
- Whisk eggs, milk, garlic, cheddar and basil in a bowl. Season. Divide among holes. Top with tomato. Bake for 20 mins or until set. Set aside in pan for 5 minutes to cool. Run a knife around each hole to loosen pies and carefully remove from pan. Serve with salad leaves, extra tomatoes and bread.
