Fried eggs and bread with prosciutto

Ingredients:
- 1 tbsp olive oil
- 4 eggs
- 8 prosciutto slices
- 80g butter
- 4 garlic cloves, unpeeled,
- 4 fresh thyme sprigs
- 2-day-old sourdough rolls, sliced
Instructions
- For fried bread, stir half the butter, half the garlic and half the thyme in a frying pan over low heat until the butter melts. Add half the bread and cook for 1-2 minutes each side or until golden and crisp. Transfer to a plate lined with paper towel to drain. Repeat with remaining butter, garlic, thyme and bread. Keep warm.
- Meanwhile, heat oil in a separate frying pan over medium heat. Crack the eggs into the pan and cook for 3-4 minutes for soft yolks or until cooked to your liking.
- Serve the eggs with the fried bread and prosciutto. Season.
