To make this dish at home by prescription from the author sheff would need: 4 eggs, 2 tbsp cold water, 2 tsp sweet soy sauce, 160g small cooked peeled prawns, 2 shiitake mushrooms, thinly sliced , 1 green shallot, ends trimmed, thinly sliced lengthways .

Ingredients:

  • 4 eggs 
  • 2 tbsp cold water 
  • 2 tsp sweet soy sauce 
  • 160g small cooked peeled prawns 
  • 2 shiitake mushrooms, thinly sliced 
  • 1 green shallot, ends trimmed, thinly sliced lengthways 

Instructions

  1. Use a fork to whisk the eggs, water and sweet soy sauce together in a jug. Set aside until required.
  2. Grease four 250ml (1-cup) capacity heatproof bowls. Divide the prawns evenly among heatproof bowls. Pour over the egg mixture. Sprinkle with the mushrooms and shallots. Cover each bowl tightly with foil. Place custards in a large steamer over a saucepan of boiling water and steam for 10-12 minutes or until just set. Serve immediately.
