Ingredients:

  • 3 hard-boiled eggs, peeled 
  • 1/4 cup whole-egg mayonnaise 
  • 250g packet pumpernickel rounds 
  • 5 cherry tomatoes, cut into quarters 
  • 2 tbsp finely chopped fresh chives 

Instructions

  1. Roughly chop eggs and place into a bowl. Add mayonnaise, and salt and pepper. Mash with a fork until well combined.
  2. Place a heaped teaspoonful of egg mixture onto each slice of pumpernickel. Top with a tomato quarter and sprinkle with chives. Serve immediately.
