Ingredients:
- 3 hard-boiled eggs, peeled
- 1/4 cup whole-egg mayonnaise
- 250g packet pumpernickel rounds
- 5 cherry tomatoes, cut into quarters
- 2 tbsp finely chopped fresh chives
Instructions
- Roughly chop eggs and place into a bowl. Add mayonnaise, and salt and pepper. Mash with a fork until well combined.
- Place a heaped teaspoonful of egg mixture onto each slice of pumpernickel. Top with a tomato quarter and sprinkle with chives. Serve immediately.
