Ingredients:

  • 4 slices wholemeal bread 
  • 1/4 cup reduced-fat ricotta cheese 
  • 20g baby spinach 
  • 2 small eggs 

Instructions

  1. Preheat jaffle maker. Spread 2 slices of bread with ricotta. Top with spinach. Place, filling side up, in jaffle maker. Break egg over filling. Sandwich with remaining bread.
  2. Cook for 4 to 5 minutes or until toasted and egg just set. Serve.
