  • 6 limes, quartered 
  • 55g caster sugar 
  • 2 Primo Classic Chorizo, cut into wedges 
  • 2 cups ice cubes 
  • 18 fresh mint leaves 
  • 250ml white rum 

Instructions

  1. Divide lime and sugar among glasses. Use the end of a rolling pin to gently pound until crushed.
  2. Preheat a barbecue grill or chargrill on medium. Thread the chorizo onto small metal or soaked bamboo skewers. Cook, turning, for 4-5 minutes or until lightly charred and cooked through. Transfer to a plate. Cover to keep warm.
  3. Half fill each glass with ice cubes. Add 3 mint leaves to each glass. Divide rum among glasses. Stir until well combined. Serve with the skewers.
