Darjeeling tea is a delicate and aromatic black tea from North East India. If you cant find it, use a good-quality loose-leaf black tea instead.

To make this dish at home by prescription from the author Gomer would need: 2 small oranges, thinly sliced, 2 tbsp cardamom pods, 12 cinnamon sticks, 6 whole star anise, 2 tbsp whole cloves , 1 tbsp allspice berries, 1 tbsp fennel seeds, 1 tbsp coriander seeds , 75g Darjeeling loose-leaf tea.

Ingredients:

  • 2 small oranges, thinly sliced 
  • 2 tbsp cardamom pods 
  • 12 cinnamon sticks 
  • 6 whole star anise 
  • 2 tbsp whole cloves 
  • 1 tbsp allspice berries 
  • 1 tbsp fennel seeds 
  • 1 tbsp coriander seeds 
  • 75g Darjeeling loose-leaf tea 

Instructions

  1. Preheat the oven to 100C/80C fan forced. Place a wire rack over a large baking tray.
  2. Place the orange slices on the prepared rack. Bake, turning the slices every 20 minutes, for 2 hours or until dried. Set aside to cool completely.
  3. Place the cardamom, cinnamon, star anise, cloves, allspice, fennel and coriander in a frying pan over medium heat and cook, stirring, for 3-4 minutes or until aromatic. Set aside to cool.
  4. Combine the spice mixture, orange and tea in a bowl. Divide among airtight containers or tea bags and wrap up as a gift.
